American Style Blueberry Pancakes

Enjoy pancakes all year round. These trendy American style blueberry pancakes can be ready at your breakfast table in a matter of minutes. Serve as a savoury treat or add a sweet kick with a blueberry coulis.

1 Beat together milk, flour, baking powder, egg and the pinch of salt until it forms a thick batter which has the consistency of double cream.

2 Melt a knob of butter, and pour into the batter.

3 Heat oil in a medium sized frying pan (about 24cm) and spoon the batter mixture into the middle of the frying pan.

4 Let it cook for 2 minutes and add a few blueberries to the pancake. Cook until golden brown and then flip.

5 Cook on the other side for another 3 minutes or until golden brown.

6 While the pancakes are being cooked; add half the blueberries into a saucepan, with the water and icing sugar.

7 Simmer until you have a dark purple sauce and the blueberries have broken down slightly.

8 Pour over the pancakes and sprinkle with a little more icing sugar.

9 Serve up immediately and enjoy!
