Ingredients
- 10 juniper berries
- 25g butter
- 2 tbsp olive oil
- 1 large onion - chopped
- 450g red cabbage - shredded
- Finely grated zest and juice of ½ orange
- 1 apple - grated
- Sea salt and freshly ground black pepper
Instructions
- Lightly crush the juniper berries with the back of a spoon or using a pestle and mortar.
- Heat the butter and oil in a medium-sized saucepan. Add the onion and cook for 6 minutes until softened.
- Stir in the cabbage and cook for 2 minutes then stir in the juniper berries, orange zest and juice and apple. Simmer, covered, for 12–15 minutes until the cabbage is just tender. Season to taste.
