Red Cabbage with Orange & Juniper

Ingredients
10 juniper berries
25g butter
2 tbsp olive oil
1 large onion
chopped
450g red cabbage
tough outer leaves discarded
shredded
Finely grated zest and juice of ½ orange
1 apple
grated
Sea salt and freshly ground black pepper
Instructions
1Lightly crush the juniper berries with the back of a spoon or using a pestle and mortar
2Heat the butter and oil in a medium-sized saucepan. Add the onion and cook for 6 minutes until softened. Stir in the cabbage and cook for 2 minutes then stir in the juniper berries, orange zest and juice and apple. Simmer, covered, for 12–15 minutes until the cabbage is just tender. Season to taste.
