10 juniper berries

25g butter

2 tbsp olive oil

1 large onion - chopped

450g red cabbage - shredded

Finely grated zest and juice of ½ orange

1 apple - grated

Sea salt and freshly ground black pepper


1Lightly crush the juniper berries with the back of a spoon or using a pestle and mortar.

2 Heat the butter and oil in a medium-sized saucepan. Add the onion and cook for 6 minutes until softened.

3 Stir in the cabbage and cook for 2 minutes then stir in the juniper berries, orange zest and juice and apple. Simmer, covered, for 12–15 minutes until the cabbage is just tender. Season to taste.
