Pan Fried Cod with White Onion and Samphire

Beautifully crispy pan-fried cod, evenly cooked to perfection. Serve with white onion, fresh samphire and a butter sauce. Try with garlic crushed potatoes or indulgent creamy mash.

3 cod fillets with skin on

3 handfuls of samphire

1 white onion thinly sliced

1 garlic clove

juice 1/2 lemon

2 tbsp butter

salt and pepper


1Add 1tbsp of butter in your pan on a medium heat. Add the onion and fry for 3 mins until softened

2Turning the heat to high, add the fish skin side down to the pan and let this fry for 3-4 minutes

3Once the skin is crispy, turn the fish over. Add samphire and crushed garlic to the pan and stir gently for 2 minutes, add more butter here if needed

4Season the dish with salt, pepper and add the lemon juice.
