Ingredients
- 3 cod fillets with skin on
- 3 handfuls of samphire
- 1 white onion thinly sliced
- 1 garlic clove
- juice 1/2 lemon
- 2 tbsp butter
- salt and pepper
Instructions
- Add 1 tbsp of butter in your frying pan on a medium heat. Add the onion and fry for 3 mins until softened.
- Turning the heat to high, add the fish skin side down to the pan and let this fry for 3-4 minutes
- Once the skin is crispy, turn the fish over. Add samphire and crushed garlic to the pan and stir gently for 2 minutes, add more butter here if needed
- Season the dish with salt, pepper and add the lemon juice.
