2 shallots chopped
2 garlic cloves
1 can chopped tomatoes
2 spring onions
200ml white wine
1kg fully prepared mussels
salt and pepper to taste
1First add the shallots to a large pan and cook until softened
2 Crush the garlic into the pot and fry for a minute
3 Add the can of chopped tomatoes, chopped spring onions and white wine and simmer gently for a couple minutes
4 Add the prepared mussels and cover the pot with the lid for 10 minutes
5 Remove the lid and stir. Add salt and pepper to taste.
