Ingredients
- 2 shallots chopped
- 2 garlic cloves
- 1 can chopped tomatoes
- 2 spring onions
- 200ml white wine
- 1kg fully prepared mussels
- salt and pepper to taste
Instructions
- First add the shallots to a large stockpot and cook until softened.
- Crush the garlic into the pot and fry for a minute.
- Add the can of chopped tomatoes
- chopped spring onions and white wine and simmer gently for a couple minutes.
- Add the prepared mussels and cover the pot with the lid for 10 minutes.
- Remove the lid and stir. Add salt and pepper to taste.
