Ingredients

  • 2 shallots chopped
  • 2 garlic cloves
  • 1 can chopped tomatoes
  • 2 spring onions
  • 200ml white wine
  • 1kg fully prepared mussels
  • salt and pepper to taste

Instructions

  1. First add the shallots to a large stockpot and cook until softened
  2. Crush the garlic into the pot and fry for a minute
  3. Add the can of chopped tomatoes, chopped spring onions and white wine and simmer gently for a couple minutes
  4. Add the prepared mussels and cover the pot with the lid for 10 minutes
  5. Remove the lid and stir. Add salt and pepper to taste.
