Ingredients

Vegetable oil

King prawns (raw)

Salt

Ground black pepper

Juice of half a lemon

1 clove of garlic (sliced)

Half a red chilli

Fresh parsley (chopped)

100ml white wine

100g butter (cubed)

Instructions

1Put the pan on the heat at least 5 minutes before you start to cook, to ensure it is warmed through.

2Add the oil to the pan, and heat until it starts to smoke.

3Add the prawns to the pan in a single layer. As soon as you've added all of the prawns, go back around usinga spoon or tongs to turn them over to seal the other side.

4Add a pinch of salt and some black pepper, and the juice of half a lemon. Then sprinkle in the garlic, chilli, and parsley.

5Add the white wine, to deglaze the pan. Finally, add the butter and continue to cook for a few seconds until it has melted.

6Serve with crusty bread as a decadent and impressive starter.
