I scream, you scream, we all scream for ice cream! While July may be the official National Ice Cream month, we think that there’s never an inappropriate time for ice cream. We’ve even been known to have it for breakfast on occasions (just don’t tell our Mums!)
One of the things we love most about ice cream is its versatility. It can be grown-up and sophisticated, or evoke childhood memories and flavours. Everyone has strong opinions about which flavour is best, whether it should be served in a bowl or a cone and if it’s best eaten in front of the TV or in the park on a boiling hot summer’s day. It’s one of those perennial classics which invites the best kinds of foodie debates and which will never go out of style.
If you’re looking for a food project to pick up this summer, why not try your hand at making your own? Many of these recipes don’t require an ice cream machine, just a lot of regular stirring to ensure you break up any pesky ice crystals. Just make a batch of custard in the biggest saucepan you can find, chill and you’re ready to go.

INDULGENT ICES
“Ultimate Cookie Dough Ice Cream.” Just saying that out loud gets our mouth watering. This incredible recipe from Food Stories isn’t the quickest as it requires you to bake a batch of cookies, attempt not to eat all of them after you’ve pulled your baking sheet out of the oven and then infuse them in milk overnight. The end result is rich, delicious and utterly decadent.
If your tastes veer more towards the chocolate (and boozy), this Bailey’s Chocolate Ice Cream from Supergolden Bakes could be just the ticket. Containing chocolate, cocoa, double cream and Bailey’s, this is definitely one for the adults. Make this to impress friends, family or a certain someone you’re trying to impress with your custard-churning skills.
Popcorn in ice cream doesn’t sound like the best combination, but when award winning food writer Olivia Poots says something works, we believe her. Her Popcorn Ice Cream recipe is "clean, impossibly smooth, and a clear popcorn flavour rises out of it." If you don’t have an ice cream maker, no problem. This recipe handily provides a method for you to make this without one. Olivia recommends serving this with a toffee sauce for the full ‘pretending you’re at the cinemas watching the trailers,” effect. You don’t need to tell us twice.
SUMPTUOUS SORBETS
Sorbets are the perfect dessert if you’re looking for something light to refresh your palate. Lavender and Lovage’s Elderflower, Rose and Strawberry Sorbet is a beautiful shade of pink and is ideal for summer. According to Karen, elderflowers are steeped in history and are thought to have many magical healing properties, as well preventing evil spirits from entering your house!Speaking of summer, is there any better seasonal flavour combination than strawberries and cream? In our recipe for Strawberries & Cream Semifreddo, they’re combined in a mouth-watering, Italian-style ice cream dessert that’s perfect for warm summer’s day. You don’t even need an ice cream machine. Simply whisk the ingredients together, chill in a loaf tin for a few hours, slice and serve. Just make sure you don’t forget the Pimms!
