Ingredients
1 tbsp oil
8 spears asparagus
80g sweetcorn kernels
3 cloves garlic - minced
6 eggs
50g cheddar cheese - grated
Salt
Black pepper
6 cherry tomatoes - halved
Instructions
1Snap the tough ends off the asparagus. Heat the oil in a frying pan, and add the asparagus, sweetcorn and garlic. Cook over a medium heat for a few minutes, until the garlic is fragrant and the asparagus is slightly softened
2In a large bowl, lightly beat the eggs, then add the grated cheese and plenty of salt and pepper. Mix well, and pour into the frying pan. Top with the cherry tomatoes
3Cook over a medium heat for a few minutes, then place under a moderate grill. Continue to alternate between the hob and the grill for another couple of minutes, until the egg has set all the way through.
