Ingredients
- 200g self-raising flour
- 1 tsp baking powder
- 1 egg
- 300ml milk
- Knob of butter
- 150g pack blueberries
- Sunflower oil or a little butter for cooking
- 2 tbsp icing sugar
- 50ml water
- Pinch of salt
Instructions
- Beat together milk, flour, baking powder, egg and the pinch of salt until it forms a thick batter which has the consistency of double cream
- Melt a knob of butter, and pour into the batter
- Heat oil in a medium sized frying pan (about 24cm) and spoon the batter mixture into the middle of the frying pan
- Let it cook for 2 minutes and add a few blueberries to the pancake. Cook until golden brown and then flip
- Cook on the other side for another 3 minutes or until golden brown
- While the pancakes are being cooked; add half the blueberries into a saucepan, with the water and icing sugar
- Simmer until you have a dark purple sauce and the blueberries have broken down slightly
- Pour over the pancakes and sprinkle with a little more icing sugar
- Serve up immediately and enjoy!
