Ingredients

180g white chocolate

115g butter (unsalted)

80g light brown sugar

2 eggs

1 tsp vanilla extract

Pinch of salt

125g plain flour

Zest of 1 lemon

5-6 strawberries

2 tsp honey

Instructions

1Pre-heat your oven to 180°c. Prepare a square baking tin by rubbing it with some butter or oil.

2Add the butter and the chopped white chocolate into a bowl and melt (using a microwave or bain-marie) until the texture is smooth. Stir frequently while the chocolate is melting.

3To the melted chocolate, stir in the sugar with a whisk. Add the eggs, one by one, stirring well after each addition.

4 Once the eggs are mixed in, add in the vanilla and salt, and sieve in the flour. Fold welluntil the mixture is uniformly combined.

5Add some lemon zest, mix well, and pour batter into the prepared baking tin. Add the sliced strawberries on the top, and drizzle with the honey.

6Bake the blondies for 25-28 minutes. You will know the blondies are baked when a toothpick inserted into the centre comes out mostly clean, with just a few moist crumbs. The edges should be a light, golden brown.

7Let the blondies cool to room temperature. Dust with icing sugar if desired. Cut into squares and serve.
