Decide on the Centre Piece of Your Roast

Lamb is the traditional choice for an Easter roast, and it’s particularly delicious covered in a marinade made from olive oil and rosemary, plus a few chilli flakes for a bit of a kick. Massage this all over your lamb, sear it and then transfer to a roasting tray and cook in the oven. Ask your butcher or check the packaging to determine exactly how long you need to cook it for.
