Red Cabbage with Orange & Juniper
Save time on the day by making this festive red cabbage in advance. It will keep in the fridge up to 3 days or can be frozen for up to 1 month.

1 Lightly crush the juniper berries with the back of a spoon or using a pestle and mortar.
2 Heat the butter and oil in a medium-sized saucepan. Add the onion and cook for 6 minutes until softened. Stir in the cabbage and cook for 2 minutes then stir in the juniper berries, orange zest and juice and apple. Simmer, covered, for 12–15 minutes until the cabbage is just tender. Season to taste.
