Nut Roast

This delicious vegetarian main course, packed full of veggies, nuts, herb and spices, makes the perfect alternative to the classic roast.

1 Preheat the oven to fan-assisted 160C / 180C / gas 4.

2 Heat the olive oil in a frying pan over medium heat and add in the onion, red pepper and garlic and fry for 5 minutes until the vegetables are softened. Stir in the mushrooms and cook for a further 10 minutes.

3 Add in the rest of the ingredients, mix well, then spoon the mixture into the baking tin and press down to flatten the surface.

4 Cover the mixture with some foil and bake for 20 minutes, then remove the foil and bake for a further 15 minutes until the loaf is firm when pressed gently.

5 Allow the loaf to cool in the tin for about 10 minutes, and then transfer to a plate, before serving.
